The clay olla usually sits on the back comal with whole spices bobbing in the water. We put Arabica coffee, rooibos, cinnamon and clove right into the grind so the morning brew skips the mortar. It is real ground coffee, not instant granules that dissolve. Brew it with boiling water, let it steep, and strain the grounds out before you drink. The pot runs sweet, spiced and dark.

What goes into it

Real ground beans

This is specialty Arabica coffee blended with rooibos, cinnamon and clove. It does not dissolve in the mug. You treat this grind like any other morning coffee, which means it needs time to steep and a screen or filter to catch the grounds.

Skip the mortar

An olla on the stove usually takes whole Mexican cinnamon crushed by hand and a cake of sweetening cracked with a mallet. We ground everything into the pouch. A scoop straight into hot water brings out the spice without waiting for hard chunks to melt.

Sweet in the cup

The brew pours dark and runs on the sweet side, true to the pot you get at a roadside comal. If your morning cup needs more bitterness, cut the scoop with your own plain dark roast grounds. The cinnamon and clove carry through fine.

Pot or French press

A French press works fast on a counter, while a small saucepan on the stove lets the spices bloom longer. Let the coffee sit off the heat for several minutes so the grounds sink to the bottom, then pour slow into clay mugs.
