Ground rice, milk and shaved cinnamon go into this powder so you can skip soaking a bowl overnight. The drink turns the color of heavy cream in the glass. It carries the dry bark warmth of the spice right away. A pitcher sits cold in the fridge until the ice melts.

A serving here is a weight, not a glass. We divide the pouch by the number of servings printed on it, so the grams add up whatever size cup you drink from.
The spice hits before the glass reaches your mouth. We use real cinnamon bark ground down fine, so the cup carries that familiar woody warmth rather than a candy imitation. It stays balanced against the milk.
Rice powder settles as the pitcher rests on the counter. That sediment is what makes horchata taste like the mercado stalls. Keep a long spoon nearby and give the jug a turn before you fill a cup.
Milk powder rounds out the rice base and gives the drink its pale cream color. It is sweetened lightly to let the grain come through. Add cold water, stir briskly and drop ice cubes in at the end.
