The dried lime keeps all of its sour snap, the chia still swells and hangs in the water, and nothing rounds the edges. It is bracing rather than refreshing in the easy sense, and that is the point: a glass of this resets the mouth after fried food or a plate of mole.

What goes into it

Sour without a cushion

Dried lime is the whole front of this drink. With nothing added to sweeten, the acid lands straight and clean, and the glass finishes dry. Stretch it with extra cold water if the first pour comes out sharper than you expected.

Chia hanging in water

Stir the scoop into a cold pitcher and give the seeds five minutes. They soften, swell and stay suspended through the jug instead of sinking, so every glass carries the same light gelled texture.

Cuts through the plate

This is the jug we reach for next to something rich. It clears the palate between bites in a way the milk-based aguas frescas cannot, and it keeps working as the ice melts and the glass thins out.
